So I did not loose any weight this week. Boo. But that is okay, I have not been eating enough veggies, and I have been fooling around a bit last week. Just need to get back on track.

Weighing in
So in response to an older post, I would like to weigh in on Mondays. That is my normal weigh in day anyway, so we should post results. I was weighing everyday like a crazy woman, but I was feeling frustrated not seeing a bunch of weight fall off everyday. So I do Monday morning (and then Tuesday too, just to make sure I wasn't bloated on Monday or something.)
How is everyone doing? Everyone like what they are eating? Is anyone out there still dieting? For any of you chocolate fans out there, I found that Jello makes a chocolate mousse (in the yogurt and chilled pudding section) it is sugar free and only 60 calories. Anyway, I like it pretty well.
Let me know your favorite treats too.

Large Marge
Hi there.
SO this is my first post because I am a bit technologically inept.
I started the SB diet in January of this year. My mom is on it with me, we both live here in Pullman WA. I used to be a skinny minnie, until I popped out two kiddos in two years (the younger turned 3 at Christmas time). Since then I have had a horrible time loosing any weight. I thought I was eating healthy, and last year this time I started working out and eating whole grains and stuff, but I only managed to loose ten pounds, which I gained back. So I finally relented and started to South Beach diet. I thought it was going to be terrible, and unhealthy, but I feel so great these days, and I have pretty much totally changed the way I eat(for life, I think). I have had pretty steady weight loss since I started and was only on stage 1 for the recommended two weeks. The first 3 days were the WORST! I had a terrible headache, and almost gave up because I felt so sick, but then it all went away, and I could feel myself getting full from the food in my belly, instead of the sugar and carbs flowing through my bloodstream. Then I got SO constipated (so for the real life tale there) but once things started moving again everything was good.
I just reached 30 pounds lost! All since January. I am feeling great, and have a lot more energy with my kids and everything else. I would still like to loose another 15 pounds, but I am feeling pretty great about what I have accomplished so far.
My daughter had her 5th birthday party, ad I had three bites of her carrot cake, and(not having had any sugar for months) I almost threw up, and I felt like I was drugged, YUCK. I couldn't talk right or get my thoughts together. Wow, I never knew how much sugar could effect you.
I have a lot of good recipes, which I will post here soon, fajitas are my staple. I love hummus, and anything grilled.

Things are going ok. I'm dealing with some rather scary health issues with my 9 month old and have been really stressed. I'm finding it really hard to stay on phase 1 right now. I just honestly dont have the time to put in to thinking about what I'm eating and not eating. So, I'm not eating which is not healthy. Yesterday before bed I told my husband I had a terrible stomach ache and my husband asked what I ate. I then realized I actually hadn't had anything to eat yet except coffee that morning. Terrible I know! I seriously was running from one Dr. apt to the next and just forgot. I made enchiladas for my family and another family who just had a baby and then ran out the door to get my hair cut. So, today I am attempting to actually think a little more about food and eating and my son is breathing better today which means my day will be less chaotic. Because I have basically been on Phase 1 since the new year, took a short 3 week break, I feel like I've instilled the life change as far as my eating habits. I'm accustomed to always grabbing whole wheat, staying away from corn and carrots, eating mostly veggies and staying away from fruits. So, I guess regardless of not having the time to make sure I'm eating phase 1 foods, I am at least eating somewhere between phase 1 and 2. So that is the update for me. I'm hoping to weigh myself at my sons Dr. apt on Monday so I should be able to update my ticker. Hope you ladies are all having success!

Day 1 Back on SB Diet.
I too cheated! I hang my head in shame... I had about 8 m&m's today while filling the plastic eggs for my family's Easter baskets and egg hunt. Why is day 1 notorious for cheating? Regardless, my first day went fairly well. Although I am finding I am so busy that I'm probably not eating nearly as much as I should especially for a breast feeding mom.
For breakfast I made a white chocolate mocha with skim milk and sugar free white chocolate on our espresso machine. Healthy I know, But phase 1 friendly. ;) For lunch I had a mozarella and tomato salad with fresh chopped basil and balsamic vinegar on top. I also had some feta on the side. Yes, I am a lover of cheese! Tonight I am planning on making the Fajitas that Chubalito already posted. They are my favorite. But alas, I need new ideas... my husband is growing tired of having fajitas ALL the time. I love them! I will probably finish up the day with 2 sugar free Popsicle before bed (or maybe mini snack bell peppers from Costco). If ever I get a sweet craze, Popsicle fix that real quick. Only 15 calories each and no sugar of course.
Tomorrow I am going to make a flank steak that is stage 1 friendly. I'll try to post the recipe soon. If you love flank steak, this is a fun one to try. I also have a recipe a friend gave me for stage 1 peanut butter cookies that I'll post tomorrow as well.
I heard a rumor that Easter is a no dieting day?? So I think for our Easter I'll try to eat healthy but allow myself that piece of strawberry pie if I feel so inclined. Happy dieting everyone!

Phase 1 Day 1
Wow. Day 1 was actually a lot harder then I thought. I did great during the structured work hours of my day, but when I got home all I wanted to do was eat everything I couldn't!!! The thing that makes the South Beach successful is successful planning. Unfortunately I didn't get to plan the next couple days meals until this afternoon which means I haven't gone to the store yet... which means I only have bad snacks in the house!!!
So today I ate:
Breakfast:
scrambled eggs w/cheese
Lunch:
Pesto Chicken w/ moz cheese
Green beans
Dinner:
Grilled Chicken Strips
I obviously didn't do great...need to get some more veggies in there for sure!

Plumpton's Phase 1 Fajitas!
3 chicken breasts cut into small pieces
2 peppers (green, red, yellow, or orange)
1 onion
2 cloves of garlic, chopped
2 Tbl white vinegar
1/8 cup soy sauce
1/3 cup white wine*
1/8 cup olive oil
1 tsp ginger spice
1-2 Tbl splenda
Mix together and marinade for at least 30 minutes then cook using a wok.
Cook up a can of black beans.
Put mixture along with the black beans into lettuce leafs instead of tortillas. Top with cilantro and lime juice.
*only approved in moderation during phase 1
